Recipes & Tips

1 medium or large ripe avocado

1/4 tsp curry powder (use less if you like it mild)

Salt to taste

  1. Scoop out the avocado in to a small bowl.
  2. Add the curry powder and salt and mash with a fork.
Make lettuce wraps, put on toast or use as a dip with fresh vegetables.

½ lb of fillets of fish (any kind of white fish you like)

½ tsp curry powder (add ½ more tsp if you like it hot!)

3 cloves of garlic, minced

1 tsp oil (for marinade)

2 tbsp oil for cooking

½ small or medium lemon

Few sprigs of cilantro (chopped)

1/2 fresh lemon

Salt to taste

  1. Pour 1 tsp of oil in a bowl and mix curry powder, garlic and salt.
  2. Add fish to the mixture and mix it until evenly coated and refrigerate for an hour.
  3. Take a flat bottom pan and heat it with 2 tbsp of oil.
  4. Once the oil is hot, add the fillets and cook for 3 - 4 minutes on each side. If it’s a ‘meatier’ fish, add an extra minute per side until you have desired level of done-ness.
  5. Squeeze lemon and garnish with chopped cilantro.

1lb pack of frozen cauliflower*, thawed

1 tbsp of oil

½ tsp of curry powder (add ½ more tsp if you like it hot!)

¾ tsp salt or to taste

Few sprigs of cilantro (chopped)

  1. Heat 1 tbsp of oil in a deep pan until it is hot.
  2. Add cauliflower and salt and cook for about 5 minutes.
  3. Add curry powder and stir until it is evenly coated.
  4. Cook for another 5 - 7 minutes.
  5. Garnish with cilantro.

*We prefer frozen because it’s usually better quality than fresh and it cooks 3x as fast.
